The Mediterranean way of eating is simpler than the label suggests: something grilled, something starchy, something raw and sharp, and bread. Every plate we serve follows that shape. Grilled meat off the skewer, rice pilaf, a salad of parsley and onion, toasted bread on the side.
Turkey sits at one end of that Mediterranean tradition and contributes its own vocabulary to it — sumac, red pepper, the wide flat skewer, yoghurt in the marinade. What you get is recognisably Mediterranean and specifically Turkish at the same time.
