We make one dessert and we make it properly rather than offering a case full of things brought in from elsewhere. Revani is a semolina cake soaked in syrup, and semolina is the reason it works — the grain absorbs syrup without turning to mush the way a flour sponge would.
The syrup is lighter than tradition strictly demands. Turkish desserts have a reputation for being overwhelming, and most of that comes from soaking cakes to saturation. Ours is sweet enough to be dessert and stops there, so it still works after a full plate of grilled meat.
