There is no fryer on the truck. Everything with protein in it goes over fire, which is a constraint more than a boast — it means the cooking has to be watched, because the window between properly charred and ruined is narrow and different for every cut.
Lamb needs to come off while the centre is pink. Liver needs ninety seconds and no more. Chicken thigh can take heat that would destroy breast. Adana needs the fat to render without the skewer drying out. Four different disciplines on the same grill, which is most of what the job actually is.

Is the meat charcoal grilled?
Everything is grilled over fire. Nothing on our menu is fried.
How do you keep the lamb from drying out?
It comes off the grill while the centre is still pink. Lamb turns tight and grey if it is taken past that point.
Is all the grilled meat halal?
Yes, every cut we grill is certified halal.
