Anatolia is the landmass that makes up most of modern Turkey, and Anatolian cooking is a regional thing rather than a national one. Adana comes from the south. Ciger belongs to Edirne in the northwest and Sanliurfa in the southeast, cooked differently in each. Revani turns up across the whole peninsula with local variations in how much syrup goes in.
Our name is not decoration. The menu is built from these regional dishes rather than from a generic idea of Turkish food, and where a dish has a specific origin we cook it the way that region cooks it rather than smoothing it out.
