A grill, a set of regional recipes, and a decision not to compromise on either.
Why Anatolia, why fire
Anatolia is the landmass that makes up most of Turkey, and Anatolian cooking is regional rather than national — the same dish is made differently three hundred miles apart, and both versions are correct. We took our name from that idea because the menu is built from specific regional dishes rather than a general notion of Turkish food.
The fire is literal. There is no fryer on board. Everything with protein in it goes over the grill, which is a harder way to run a restaurant and the only way these dishes work.
Two things we decided early
The first was that the whole kitchen would be halal rather than part of it. Half-measures on this create exactly the uncertainty people are trying to avoid, and we did not want anyone standing at the counter asking which items counted.
The second was that we would not simplify the dishes to make them easier to sell. Grilled lamb liver is not an obvious thing to put on a menu in Mountain View. It is on ours because it is a real Turkish dish, cooked well, and because the people who know what ciger is deserve to be able to find it here.
Fully halal
Every protein certified. No separate menu, no separate preparation.
