Kebab is not one dish
The word gets used as though it describes a single thing, which it does not. Adana is ground lamb and beef, hand-seasoned with red pepper and pressed by hand onto a wide flat skewer. Kofte is the same family of meat shaped into ovals and seasoned with herbs instead. Shish is whole cubed meat threaded onto a thin skewer, which picks up char on every surface.
These eat differently, taste differently, and want different things alongside them. We cook all five the way each is meant to be cooked rather than running them through the same process and calling the result kebab.
Adana
Hand-seasoned ground lamb and beef, medium red pepper heat, wide skewer.
Kofte
Ground beef shaped by hand into five ovals per plate. Mild, herb-forward.
Shish
Cubed chicken, lamb or liver on a thin skewer. Maximum char, lighter bite.

Yes, everything goes over the grill. There is no fryer on board.
